Gluten Free Quinoa Tabbouleh

Serves 4


  • 4 cups of chopped parsley (leaves only)
  • 1 cup of chopped mint (leaves only)
  • 1 cup of cooked quiona
  • ½ cup of chopped tomato
  • ¼ cup of freshly squeezed lemon juice
  • 2 tablespoon of extra virgin olive oil (optional)
  • 2 tablespoon of chopped green onion (optional)


  1. Combine all of the ingredients in a large mixing bowl. Stir or toss your salad until well combined.
  2. Serve immediately
