Vegan Red Velvet Cheesecake Brownies

Makes 1 tray of brownies  (20 cm square pan)

Cheesecake layer:

  1. Soak the cashew for 4 hours or overnight within the fridge
  2. Reserve 2 tablespoons of the cashew water, drain, and place the cashews into your high performance blender along with the water, vanilla and maple syrup.
  3. Secure the lid and process for about 50 secs or until smooth.
  4. Transfer the batter into a bowl set aside.

Red velvet brownies layer:

Preheat oven to 350° F or 180°C and Line a 20cm square baking pan with parchment paper, set aside.

Mix the oat flour, arrowroot flour, vanilla and baking powder until well combined.

Place the beetroot, hazelnut milk, garbanzos, olive oil, cacao powder, maple syrup, vanilla and the dry mixture into your high performance blender. Secure the lid and switch the power on from low to high. Process for 40 seconds or until it forms a smooth batter.

  1. Transfer the batter into a bowl, set aside ¼ cup of the batter
  2. Fold in the choc chip into the bowl, then transfer the batter into the pan.
  3. After the batter is evened out, spread on the cheesecake layer evenly.
  4. Put the ¼ cup of the batter into a pipping bag, pipe dots onto the cheesecake layer.
  5. Run a skewer between the 2 layers back and forward until you get a marble effect.
  6. Bake for 35 to 40 minutes, then let cool on wire rack for 30 minutes.
  7. Use heart shape cookie cutters to cut out the brownies! if you are lazy just use a knife to slice it.
  8. You can have it immediately but I find it taste better after chilled in the fridge overnight.
