Vegan Stuffed Peppers with Brown Rice

Serves 3

Stuffed pepper Ingredients:

  • 3 bell peppers, take the top off and remove the seeds
  • 1 cup of cooked brown rice
  • ¼ cup chopped basil
  • ¼ cup chopped fresh tomato
  • ¼ cup chopped kalamata olive
  • ¼ cup cup toasted cashew
  • Pinch of sea salt (optional)

Tomato sauce ingredients:

  • ¼ cup chopped basil
  • 3 pitted kalamata olives
  • ¾ cup chopped fresh tomato
  • ¼ cup tomato paste’
  • Pinch of sea salt (optional)

Instructions:

  1. Preheat your over to 180ºC or 375ºF
  2. Place all of the stuff pepper ingredients (except the bell peppers) into a large mixing bowl, mix until well combined.
  3. Fill the pepper holes with the rice mixture,
  4. Transfer the filled peppers to a oven proof baking dish and set aside.
  5. Place all of the tomato sauce ingredients into your high performance blender, secure the lid and process for about 40 secs or until smooth.
  6. Time comes to pour the sauce around and all over the peppers, put the pepper top back on
  7. Cover the baking dish with foil or parchment paper, transfer to the oven and bake for 1 hr
  8. Serve immediately
